Veggie Tahini Lentils

Another quick and easy healthy meal. Finally found some tahini paste rather than using sesame oil or seeds.

First the red onion was fried until it was soft and golden.


Then the pepper, courgette and green beans were added to the pan and fried. Meanwhile I mixed the tahini paste with lemon juice and garlic to form the dressing. The tahini was much more oily than was expecting and very strong.


Finally the spinach (I'm not using kale ever) and the pre cooked puy lentils were added and mixed in for a few minutes along with the tahini dressing. This was actually very filling and refreshing. I'm keen to play around with tahini some more.
